Water spinach
Hot spring water of 26-30℃ is used to grow water spinach (swamp cabbage). The main variety has white stems and big leaves, and the growing period is from March to November. Water spinach grows fast and can be harvested once every two weeks. The water spinach grow in Jiaoxi has fat stems and big leaves and is excellent. No matter what cooking method is used, it stays crispy and tasty and has thus become of the most renowned Jiaoxi hot spring vegetable.
Jade green and tender hot springs water spinach has thick stems and large leaves and is of excellent quality.
Hot springs water bamboo shoots
The water bamboo shoot fields in Jiaoxi are irrigated using hot spring water; most of the shoots grown are “red shell” water bamboo shoots, grown between September and November. The shoots are tender, pure white, crispy and sweet, and of excellent quality, making them a much sought after food after Mid-Autumn Festival.

Hot springs towel gourds
The towel gourds grown in Jiaoxi are longer than in other areas; when they are cooked the fibers are tender and they don’t turn black. They are pleasantly sweet, tasty and refreshing and are loved by consumers. The petals of the flowers can be dipped in batter and then deep fried, the crispy texture and delicate appearance providing a treat for the taste buds and eyes.

Yilan Oval kumquat
Oval kumquat, only grown in Yilan, are produced in abundance in the Dajiao, Xiaojiao and Linmei creek areas. The kumquat grown in the area are large and evenly shaped, with a golden luster in the green color. The skin is thin and soft, the juice is sour with a hint of sweetness;the kumquats can be eaten with the skin raw;they are rich in Vitamin C.

To encourage the eating of high quality rice, the Jiaoxi Farmers Association brought out a branded hot springs fragrant rice. This specially-bred high quality variety is superior to the mass produced varieties.The main features of the rice is that it has the aroma of taro when cooked and in appealing in appearance, taste and stickiness. This is one of the most distinctive varieties of rice in Taiwan.
